Honest Weight + Vermont cheddar + New York beer = Moo York Stout Cheddar!

In January of 2017, three Honest Weight cheesemongers, Linda, Yurie, and Kate, visited Vermont Farmstead Cheese Company to craft an exclusive cheese featuring Butternuts Beer and Ale's Moo Thunder Stout.

The resulting cheese is Moo York Stout Cheddar. Featuring a beautiful marbled surface, creamy texture and smooth malted barley flavor, this cheddar is perfect for beer-lovers and cheese-lovers alike. And like so many good things in life, Moo York Stout Cheddar will only get better with age.

Moo York Stout Chili

Try Honest Weight's exclusive Moo York Stout Cheddar with this delightful chili recipe, created by HWFC member-owner and board member, Kate! With smoky chipotle peppers and toasted spices, this recipe is sure to warm you up! Perfect for tailgate parties, potlucks, or family dinners, Moo York Stout Chili is tasty in an hour and even better heated up the next day.

2 Tbsp ground cumin, toasted

1½ Tbsp ground coriander, toasted

5 lbs ground chuck

6 large yellow onions, chopped

4 large red bell peppers, chopped

4 large yellow bell peppers, chopped

2 large jalapeños, seeded & chopped

7 Tbsp chili powder

1 Tbsp canned chipotle chiles in adobo sauce

2 - 28 oz cans crushed tomatoes

2 - 15 oz cans kidney beans

12 oz Butternuts Moo Thunder Stout

Honest Weight Moo York Stout Cheddar to top

Salt & pepper to taste

Brown meat & drain the excess fat. Add the veggies to the same pan and cook until lightly browned, then add in the remaining ingredients & simmer for 45 mins. Season with salt & pepper to taste. Serve into bowls or over rice and top with shredded Moo York Stout Cheddar, chopped green onions, & sour cream. Enjoy!
